Fall is my favorite time of year because everything goes Pumpkin Spice. From coffee to cereal, pumpkin is everywhere even in my kitchen. I admit to loving the taste of pumpkin spice though most of my family is pretty much over it. That is unless I am making my homemade doughnuts.
My family loves the taste of freshly cooked doughnuts still warm from the fryer. I usually just make sweet doughnuts then dip them in powdered sugar or cinnamon. That was until I received some yummy Pumpkin Spice pancake mix from my favorite company Krusteaz .
With this pancake mix I was able to make delicious Pumpkin spice doughnut holes with a pumpkin spice glaze.
Pumpkin Spice Doughnuts
2 cups Pancake mix
1 tsp pumpkin pie spice
3/4 cup buttermilk
1/4 cup canola oil
Combine Pamela’s Baking & Pancake Mix and spice. Mix buttermilk with oil and egg and pour into dry ingredients. Mix well.
In a fry pan heat oil until hot. Drop batter by teaspoonfuls into hot oil and fry for 3 to 5 minutes or until balls puff and turn golden. Drain on paper towels.
Chef’s notes: These donut holes sometimes flip themselves in the skillet, much to my delight.
1 cup powdered sugar
2 tablespoons milk
1 tablespoon pumpkin puree
½ teaspoon pumpkin pie spice
¼ teaspoon vanilla extract
Combine till glaze forms. Dip doughnuts in glaze, served warm with milk or coffee.
